Honey Baked Garlic Recipe

This is a very easy to make appetizer that's sure to appeal to garlic zealots.  This can be served to with mini-toast, goat cheese, and pine nuts; or as a spread for garlic bread.

Ingredients

  • 3 Garlic Heads
  • 3 T Extra Virgin Olive Oil
  • 3-5 T Honey

Directions

Preheat oven to 350°.  Cut off the top quarter of the unpeeled garlic head (the pointed end).  I use a serated knife to simplify this task.

Get a piece of tin foil (enough to wrap all the heads of garlic in).  I'll place the garlic onto the center of the foil (shiny side up).  Pour the olive oil on top and start to pull up all four corners to avoid oil getting all over.  Baste the top of each head with about 1 T of honey.  Pull the 4 corners up to meet and wrap it to seal.  You need to seal it up so the garlic steams, but keep in mind you will need to open it up to add more honey.

Put the wrapped garlic on a tray into the oven for 60 minutes.  Baste the garlic with more honey about 20 minutes into cook time, and then at 45 minutes into cook time; re-sealing each time.  The garlic should spread like a butter; just stick a small butter knife into each clove pocket to pop it out.
